This pan was stripped of the built up seasoning and re-seasoned using Sheryl Canter's guidance.
Cleaning: I stripped the pan first by scraping off the carbon and then ran it through a self-cleaning oven cycle.
Seasoning: I then applied 4 separate, thin coats of organic, cold-pressed, unrefined, flaxseed oil—a drying oil. I put the pan in the oven at 500° F for an hour (heated up from a cold oven) to create a polymerized finish.
Black rust (prevents corrosion): For the last 2 coats (of 4), I put the pan in a cold oven at 450° F for an hour without seasoning to start the black rust (magnetite) process. Then, I took the pan out, oiled it, and put it back in for another hour at 500° F. See this blog for more detail: http://sherylcanter.com/wordpress/2010/02/black-rust-and-cast-iron-seasoning/
Note: You should not heat flaxseed oil past its smoke point (225° F). But, you need to heat it above this temperature to create the polymerized finish.
